Polish Easter Salad

I always look forward to Easter in our house. It’s always been such a special Polish tradition for my family when I was growing up. Now I want to pass that cultural tradition down to my son as well as make new Australian-inspired traditions. This Polish potato salad known as Jarzynowa (translating to vegetables) is a staple festive salad which is always present for special occasions including Christmas, Easter and weddings. The primary ingredient is potato however this salad involves lots of finely diced vegetables. The flavours of dill and pickles are such a nostalgia for me and frequently used in my kitchen!

JARZYNOWA SALAD

Ingredients

·       5 medium salad potatoes peeled

·       2 medium carrots peeled

·       2 parsnips, peeled

·       5 eggs hard boiled

·       4 dill pickles

·       1 can of peas (the flavour of canned peas for some reason work in this dish but you can use fresh or frozen).

·       1 brown onion

·       1 apple peeled (do this last so they don’t brown – also you can add a bit of lemon juice)

·       Dill

 

 

Dressing

·       5 tablespoons thick yogurt

·       5 tablespoons mayonnaise

·       1 tablespoon mustard

·       1 teaspoon of lemon juice

·       Fine sea salt and pepper to taste

·       Dill extra or as required

 

Instructions

1.                 Place the potatoes, carrots and parsnips in a pot, add water and bring to the boil. Then simmer until tender but make sure you don’t overcook. Boil the eggs in a separate pot for 8-10 minutes.

2.                 Dice all the ingredients (Potatoes, carrots, parsnips, apples, eggs, onions, pickles). Put all ingredients into a large bowl and gently fold together with a spatula – don’t over stir to avoid vegetables mushing together.

3.                 To make the dressing add yogurt, mayonnaise, mustard, seasoning and chopped dill. We love dill in our house hold but feel free to add as little or as much as you like!

4.                 Add the dressing to the salad ingredients and fold gently again until vegetables are covered in the dressing.

5.                  Place the salad into a festive dish and pat down. Add a tablespoon of mayonnaise to the top and smooth down the salad with the back of a spoon or spatula. Decorate to your hearts delight! I like to use cherry tomatoes and pickles.
